2. في طاجين الضغط نقوم بقلي جميع الخضر واللحم مع القليل من الزيت ونضيف البهارات ثم نمرق حتى تتغطى الخضرة واللحم بعد الغليان نضيف الحمص والطماطم المصبرة ونغلق.
3. في صحن واسع نقوم برش الشعير بكمية كاس ماء جيدا ونتركه يتشرب كل السوائل.
4. بعدها في كسكاس نرفعه لحتى يفور على البخار بعد ان يجهز هز نضرب فوق الشعير براحة اليد اذا لم تلتصق الحبات باليد يعني انه جاهز.
5. ننزعه ونسكبه في صحن واسع بواسطة كاس من الماء نرش الشعير ونتركه يتشرب جيد ثم نقوم يتفويره للمرة الثانية قبلها نضع عليه ملعقتين زيت وملعقة قهوة توابل بعد ان يجهز نفرشه في صحن التقديم ونضيف له ملعقة دهن وفلفل اسود وكمون.
6. عندما يجهز المرق يكون المرق عاقد وليس به الكثير من الماء...... نسقي البوترزة ونقدمه شهية طيبة.
