Instructions to make حمص الشام:
- ينقع الحمص ليلا ويترك حتى صباح اليوم التالي.
- يصفي ماء النقع ويغسل الحمص ثم يوضع في ماء جديد ومعه بصلة وفصوص الثوم والطماطم(بعد نزع العنق منها ليسهل انتزاع القشر عنها) ويوضع على النار.
- بعد ان يقترب من السواء تستخرج حبات الطماطم وينزع عنها القشر ثم تعاد للحله مرة اخرى.
- بعد ان ينضج الحمص اذا كان لونه فاتح يضاف ١ ملعقة صلصة للتعويض عن لون الطماطم ثم يوضع القليل من الملح وليس تمليح كامل ويترك ليغلي فترة حتى يتشرب الملح.
- يوضع في الأكواب ويوضع على كل كوب لحده كل من ملح وكمون وعصير ليمون وشطة (حسب الرغبة) لان لو ثم وضعهم على الحله كاملة ستفسد سريعا وألف هنا.
