1. اولا نحضر العجينة نضع الدقيق في صحن كبير نضيفلو الملح والخل والسكر والماء ونخلط بالفوي جيدا هكذا نسهل على روحي يعني العجينة مهيش رايحة تحتاج عجن كبير نضيف الفرينة حتى نتحصل على عجينة طرية وناعمة الملمس نغطيها بكيس ونخليها قليل ونرجع نعجنها قليلا هي راهي روعة وحدها معجونة مليح.
2. نحضر الحشو: نرحي البصل والفلفل ونضعهم في مقلاة فيها زيت ونقليهم نضيف الثوم الي رحيتو لازم نذبلو البصل مليح ونضيف الطماطم الي رحيتها ونخلط ثم نضيف التوابل والطماطم المصبرة وندير نصف كوب ماء ونخليها تغلي لما تنشف نطفي عليها ونضيف كسبر مقطع ونخليها تبرد.
3. هنا نكور العجينة كور صغيرة الحجم او حسب الحجم الي حبيتوه نتاع المحاجب نديرلهم الزيت ونخليهم قليلا حوالي ربع ساعة أو أكثر ثم ندير في صحن الزيت ونبدأ نحل العجينة نستعين بالزيت باش تمشي معايا نحلها دائرة رقيقة نغلق جهة ونضع الحشوة شكل مربع ونغلق الجهة الأخرى ثم نغلق الجوانب كما في الصورة ونهزها ونطيبها في الطاجين درتلو القليل من الزيت.
4. نطيبها من الجهتين النار متوسطة حتى تاخذ اللون الذهبي وطيب وبصحتكم.
5. ملاحضة الي متقدرش تهزها تحلها على ورق الطهي تكوني قصيتية على شكل مربع وتشكلي عليه وترفديها بالورق وتقلبيها على الطاجين وتنحي الورق وتكملي طيبيها عادي.
