1. غسل قطع الدجاج وتنظيفها ونقعها في ليمون ولبن وبهارات (ثوم مطحون بهار دجاج ملح خل ماستر أوكاري وتركها ليلة كاملة في الثلاجة.
2. بيضتان اخلطهم مع بعض واضع عليهم بهار ابيض للتخلص من الزفرة.
3. اخرج الدجاج من الثلاجة واضعه في طحين واغطي جميع القطع به.
4. أضع القطع في كيس نايلون واضع فوقهم خليط البيض واحرك الكيس جيدا بعد ان امسك راْسه جيدا الى ان تتغطى كل القطع بالبيض.
5. أضع بخصمات مع سماق وأبدأ بإخراج قطعة قطعة وتغطيتها بالبخصمات ووضعها في إناء.
6. أضع مقلاة مع زيت وفير على النار وعندما تحمى النار ابدأ بالقلي واتركها على نار هادئة حتى ينضج الدجاج من الداخل.
7. في إناء التقديم أضع ورق لتصفية الزيت واخرج قطع الدجاج واضعها فوقه يقدم مع بطاطا مقلية والف عافية.
